The legacy of the masters of cold and snow
Our name, Ca’n Joan de S’Aigo, holds the secret of our origin: the trade of water and snow. Before mechanical refrigeration existed, we depended on the cases de neu (snow houses) located at the peaks of the Serra. There, snow was collected during the winter in dry-stone pits to be transported to the city in summer, where it was transformed into the island’s first iced drinks and sorbets.
This “practical intelligence” of our ancestors remains present today in every ice cream cup we serve.
