Founded around 1700 by Joan Thomàs, a native of Valldemossa, Ca’n Joan de s’Aigo began its journey by serving ice pressed in the snow houses of the Serra de Tramuntana, next to the emblematic Church of Santa Eulalia. In those days, the establishment offered ice and fresh water, to which fruit juices were added to create ice creams—thus giving rise to the name that today conveys so much history and flavor.
The passion for innovating without losing its essence became evident when Joan Thomàs traveled across Europe in search of new recipes to enrich his offerings, marking the beginning of a long tradition of quality and creativity.

Evolution and Family Love: From Generation to Generation

At the beginning of the 20th century, Antoni Martorell Guasp acquired the business and, in 1976, moved the establishment to the current Calle de Can Sanç, where the iconic hand-painted sign from the La Roqueta factory still stands. The menu was expanded to include products that have become indispensable in our cafés, such as hot chocolate, traditional ensaimadas, quartos, and other locally crafted specialties. Over time, this legacy has been kept alive through the generations and is today managed by nine cousins of the family, who oversee three locations:
