The Ca’n Joan de s’Aigo ensaimada is not just a pastry; it is the result of a recipe passed down from master artisan to master artisan since 1700. Slowly crafted with the finest lard (saïm), sourdough, and the expertise of our skilled hands, each ensaimada is a unique work of art. How we make our Mallorcan ensaimada
Our artisanal process
Behind every ensaimada lies a slow, careful process that we have respected for over 3 centuries: we begin by working the dough with great care, letting it rest for as long as necessary, and stretching it to achieve that characteristic fine, soft texture. Then, it is rolled with saïm (lard), shaped into a spiral, and left to rest again before entering the oven. Only in this way do we achieve an ensaimada that is light on the inside, slightly crispy on the outside, and holds the traditional flavor of always.

A cozy and charming place, ideal for taking a break and enjoying a delicious ensaimada. The classic choice—and most recommended—is the plain ensaimada, and it is spectacular!
