Slowly crafted with the finest lard (saïm), sourdough, and the expertise of our skilled hands, each ensaimada is a unique work of art. It is the texture—crispy on the outside and tender on the inside—that accompanies our hot chocolate, Sunday breakfast in Palma, and the undisputed memory of the island.

How we make our Mallorcan ensaimada
Our artisanal process: this is how we make each ensaimada
Behind every ensaimada lies a slow and meticulous process that we have respected for over three centuries: it begins with carefully working the dough, allowing it to rest for the necessary time, and then stretching it until it achieves that characteristic thin and smooth texture. Next, it is rolled with the saïm (a type of pastry), shaped into a spiral, and left to rest again before going into the oven. Only in this way can we achieve that ensaimada that is light on the inside, slightly crispy on the outside, and with its signature flavor.




Not all ensaimadas are the same. The difference between a truly Mallorcan ensaimada and an industrial version lies in what you can’t see: the type of fat, the fermentation time, the hand-kneading of the dough. At Can Joan de s’Aigo, we’ve been doing exactly the same thing for over three centuries, without shortcuts, because we know that any change in the process affects the flavor.

A cozy and charming place, ideal for taking a break and enjoying a delicious ensaimada. The classic choice—and most recommended—is the plain ensaimada, and it is spectacular! The almond milk is also worth trying. 100% recommended. Important: wait to be seated, as indicated by the sign at the entrance.
